Chef Aldo makes his grand return after 10 years away in his beloved city of Marrakech, where he comes back to share a cuisine infused with memories, passion, and Mediterranean inspirations.

Aldo Aronica is a chef whose journey and passion tell a true story of transmission, travel, and creation. Born in Sicily, he grew up between his native island—often called the Island of the Gods—and the province of Florence, two regions rich in culinary traditions that deeply shaped his gastronomic identity.

It was alongside his mother that he first discovered his love for cooking. As a child, he watched with wonder as ancestral dishes were prepared, simmering slowly with patience and generosity. These formative memories became the foundation of his vocation and continue to inspire his authentic approach to gastronomy today.

With 40 years of experience, Aldo Aronica has traveled the world, enriching his expertise through encounters and discoveries. From Spain to Mauritius, passing through Djibouti and Congo, he has absorbed local cultures and regional produce. His journey has also led him to work in some of the world’s most prestigious hotels and palaces, where he refined his standards and attention to detail.

His philosophy: respect the ingredients, favor fresh and seasonal products, and honor traditional recipes.
